Chole Bhature is a classic North Indian dish that consists of spicy and tangy chickpea curry (chole) served with deep-fried bread (bhature). It is a popular street food and a favorite dish in many households. Here’s how you can make delicious Chole Bhature at home:


Ingredients for Chole:
- 1 cup dried chickpeas (chole), soaked overnight
- 2 medium onions, finely chopped
- 2 medium tomatoes, finely chopped
- 2-3 green chilies, slit lengthwise
- 1-inch piece of ginger, grated
- 4-5 cloves of garlic, minced
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tbsp chole masala (available in stores or homemade)
- 1 tsp red chili powder
- 1/2 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp vegetable oil
- Fresh coriander leaves for garnish
Instructions for Chole:
- Drain the soaked chickpeas and rinse them with fresh water. In a pressure cooker, add the chickpeas, 4 cups of water, and 1/2 tsp of salt. Pressure cook for 6-7 whistles or until the chickpeas are cooked through and soft. Set aside.
- In a pan, heat the vegetable oil over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onions and sauté until golden brown.
- Add the grated ginger, minced garlic, and slit green chilies. Sauté for another 2-3 minutes.
- Add the finely chopped tomatoes and cook until they are soft and mushy.
- Add turmeric powder, chole masala, red chili powder, coriander powder, garam masala, and salt. Cook the spices for 2-3 minutes, until they are well combined.
- Add the cooked chickpeas along with the cooking liquid to the pan. Mix well and bring it to a boil. Reduce the heat to low and let it simmer for 15-20 minutes, allowing the flavors to meld together.
- Garnish with freshly chopped coriander leaves and keep the chole warm while you prepare the bhature.

- 2 cups all-purpose flour (maida)
- 1/2 cup plain yogurt
- 1 tsp sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp vegetable oil
- Water, as needed, to knead the dough
- Vegetable oil for deep frying
Instructions for Bhature:
- In a mixing bowl, sift the all-purpose flour. Add yogurt, sugar, baking powder, baking soda, salt, and vegetable oil. Mix well.
- Gradually add water, little by little, and knead the dough until it is smooth and soft. Cover the dough with a damp cloth and let it rest for 30 minutes.
- After resting, knead the dough again for a few minutes to make it smooth.
- Divide the dough into small lemon-sized balls and roll them into small discs using a rolling pin.
- Heat vegetable oil in a deep frying pan over medium-high heat.
- Carefully slide the rolled bhature into the hot oil and fry until they puff up and turn golden brown on both sides.
- Remove the bhature from the oil using a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.
