Chole bhature recipe

Chole Bhature is a classic North Indian dish that consists of spicy and tangy chickpea curry (chole) served with deep-fried bread (bhature). It is a popular street food and a favorite dish in many households. Here’s how you can make delicious Chole Bhature at home:

Ingredients for Chole:

  • 1 cup dried chickpeas (chole), soaked overnight
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, finely chopped
  • 2-3 green chilies, slit lengthwise
  • 1-inch piece of ginger, grated
  • 4-5 cloves of garlic, minced
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tbsp chole masala (available in stores or homemade)
  • 1 tsp red chili powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp vegetable oil
  • Fresh coriander leaves for garnish

Instructions for Chole:

  1. Drain the soaked chickpeas and rinse them with fresh water. In a pressure cooker, add the chickpeas, 4 cups of water, and 1/2 tsp of salt. Pressure cook for 6-7 whistles or until the chickpeas are cooked through and soft. Set aside.
  2. In a pan, heat the vegetable oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the finely chopped onions and sauté until golden brown.
  4. Add the grated ginger, minced garlic, and slit green chilies. Sauté for another 2-3 minutes.
  5. Add the finely chopped tomatoes and cook until they are soft and mushy.
  6. Add turmeric powder, chole masala, red chili powder, coriander powder, garam masala, and salt. Cook the spices for 2-3 minutes, until they are well combined.
  7. Add the cooked chickpeas along with the cooking liquid to the pan. Mix well and bring it to a boil. Reduce the heat to low and let it simmer for 15-20 minutes, allowing the flavors to meld together.
  8. Garnish with freshly chopped coriander leaves and keep the chole warm while you prepare the bhature.

  • 2 cups all-purpose flour (maida)
  • 1/2 cup plain yogurt
  • 1 tsp sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp vegetable oil
  • Water, as needed, to knead the dough
  • Vegetable oil for deep frying

Instructions for Bhature:

  1. In a mixing bowl, sift the all-purpose flour. Add yogurt, sugar, baking powder, baking soda, salt, and vegetable oil. Mix well.
  2. Gradually add water, little by little, and knead the dough until it is smooth and soft. Cover the dough with a damp cloth and let it rest for 30 minutes.
  3. After resting, knead the dough again for a few minutes to make it smooth.
  4. Divide the dough into small lemon-sized balls and roll them into small discs using a rolling pin.
  5. Heat vegetable oil in a deep frying pan over medium-high heat.
  6. Carefully slide the rolled bhature into the hot oil and fry until they puff up and turn golden brown on both sides.
  7. Remove the bhature from the oil using a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.
