
Ingredients:
- 250g paneer, cut into cubes
- 2 tablespoons ghee (clarified butter) or vegetable oil
- 1 large onion, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1/2 teaspoon cumin seeds
- 2-3 green cardamom pods
- 2-3 cloves
- 1 small cinnamon stick
- 1 bay leaf
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 cup tomato puree
- 1/2 cup cashew nut paste (soaked cashews blended into a smooth paste)
- 1/2 cup heavy cream
- 1 tablespoon sugar
- Salt to taste
- Chopped cilantro (coriander) for garnish
Instructions:
- Heat ghee or oil in a pan over medium heat. Add cumin seeds, green cardamom pods, cloves, cinnamon stick, and bay leaf. Saute for a minute until fragrant.
- Add finely chopped onion and sauté until it turns golden brown.
- Add ginger paste and garlic paste, and sauté for another minute.
- Add red chili powder, turmeric powder, coriander powder, and garam masala. Mix well and cook for a minute.
- Add tomato puree and cashew nut paste. Mix well and cook for 2-3 minutes until the oil starts to separate from the masala.
- Add heavy cream and sugar. Mix well and let it simmer for another 2-3 minutes.
- Add paneer cubes and gently stir to coat them with the gravy. Cook for 2-3 minutes on low heat.
- Add salt to taste and mix well.
- Garnish with chopped cilantro (coriander) and serve hot with naan, roti, or rice.
