Ingredients:

  • 250g paneer, cut into cubes
  • 2 tablespoons ghee (clarified butter) or vegetable oil
  • 1 large onion, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1/2 teaspoon cumin seeds
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1 small cinnamon stick
  • 1 bay leaf
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 cup tomato puree
  • 1/2 cup cashew nut paste (soaked cashews blended into a smooth paste)
  • 1/2 cup heavy cream
  • 1 tablespoon sugar
  • Salt to taste
  • Chopped cilantro (coriander) for garnish

Instructions:

  1. Heat ghee or oil in a pan over medium heat. Add cumin seeds, green cardamom pods, cloves, cinnamon stick, and bay leaf. Saute for a minute until fragrant.
  2. Add finely chopped onion and sauté until it turns golden brown.
  3. Add ginger paste and garlic paste, and sauté for another minute.
  4. Add red chili powder, turmeric powder, coriander powder, and garam masala. Mix well and cook for a minute.
  5. Add tomato puree and cashew nut paste. Mix well and cook for 2-3 minutes until the oil starts to separate from the masala.
  6. Add heavy cream and sugar. Mix well and let it simmer for another 2-3 minutes.
  7. Add paneer cubes and gently stir to coat them with the gravy. Cook for 2-3 minutes on low heat.
  8. Add salt to taste and mix well.
  9. Garnish with chopped cilantro (coriander) and serve hot with naan, roti, or rice.
