Here’s a unique traditional recipe for Indian-style mutton curry:

Ingredients:

  • 1 kg mutton (goat meat), cut into pieces
  • 2 large onions, finely chopped
  • 2 tomatoes, pureed
  • 4-5 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2-3 green chilies, slit
  • 1/2 cup plain yogurt
  • 2 tbsp oil
  • 2 tbsp ghee (clarified butter)
  • 1 cinnamon stick
  • 2-3 cardamom pods
  • 2-3 cloves
  • 1 bay leaf
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 2 tsp coriander powder
  • 1/2 tsp garam masala powder
  • Salt to taste
  • Fresh coriander leaves, for garnish

For Marination:

  • 1/2 cup plain yogurt
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt to taste

Instructions:

  1. In a bowl, marinate the mutton pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, and salt. Let it marinate for at least 2 hours or overnight for best results.
  2. Heat oil and ghee in a heavy-bottomed pan or pressure cooker over medium heat. Add the whole spices – cinnamon stick, cardamom pods, cloves, bay leaf, and cumin seeds. Let them splutter and release their aroma.
  3. Add the finely chopped onions to the pan and sauté until they turn golden brown.
  4. Add the minced garlic and grated ginger to the pan and sauté for a couple of minutes until the raw smell goes away.
  5. Add the pureed tomatoes to the pan and cook until they soften and oil starts to separate from the mixture.
  6. Add the marinated mutton pieces to the pan and cook on high heat for 5-7 minutes, stirring occasionally, until the mutton changes color and gets seared.
  7. Reduce the heat to medium, add the slit green chilies, and cook for another 5 minutes.
  8. Add turmeric powder, red chili powder, and coriander powder to the pan and mix well. Cook for a few minutes until the spices are well incorporated.
  9. Add 1/2 cup of water to the pan and bring it to a boil. Then cover the pan with a lid and simmer for about 30-40 minutes or until the mutton is cooked and tender. If using a pressure cooker, cook for 2-3 whistles.
  10. Once the mutton is cooked, add garam masala powder and salt to taste. Stir well and cook for another 2-3 minutes.
  11. Garnish with fresh coriander leaves and serve hot with steamed rice, naan, or roti.
