
Ingredients:
- 1 kg mutton (goat meat), cut into pieces
- 2 large onions, finely chopped
- 2 tomatoes, pureed
- 4-5 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2-3 green chilies, slit
- 1/2 cup plain yogurt
- 2 tbsp oil
- 2 tbsp ghee (clarified butter)
- 1 cinnamon stick
- 2-3 cardamom pods
- 2-3 cloves
- 1 bay leaf
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 2 tsp coriander powder
- 1/2 tsp garam masala powder
- Salt to taste
- Fresh coriander leaves, for garnish
For Marination:
- 1/2 cup plain yogurt
- 1 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- Salt to taste
Instructions:
- In a bowl, marinate the mutton pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, and salt. Let it marinate for at least 2 hours or overnight for best results.
- Heat oil and ghee in a heavy-bottomed pan or pressure cooker over medium heat. Add the whole spices – cinnamon stick, cardamom pods, cloves, bay leaf, and cumin seeds. Let them splutter and release their aroma.
- Add the finely chopped onions to the pan and sauté until they turn golden brown.
- Add the minced garlic and grated ginger to the pan and sauté for a couple of minutes until the raw smell goes away.
- Add the pureed tomatoes to the pan and cook until they soften and oil starts to separate from the mixture.
- Add the marinated mutton pieces to the pan and cook on high heat for 5-7 minutes, stirring occasionally, until the mutton changes color and gets seared.
- Reduce the heat to medium, add the slit green chilies, and cook for another 5 minutes.
- Add turmeric powder, red chili powder, and coriander powder to the pan and mix well. Cook for a few minutes until the spices are well incorporated.
- Add 1/2 cup of water to the pan and bring it to a boil. Then cover the pan with a lid and simmer for about 30-40 minutes or until the mutton is cooked and tender. If using a pressure cooker, cook for 2-3 whistles.
- Once the mutton is cooked, add garam masala powder and salt to taste. Stir well and cook for another 2-3 minutes.
- Garnish with fresh coriander leaves and serve hot with steamed rice, naan, or roti.
